Cauliflower Breadsticks
Ingredients:
- cauliflower, broken into florets - 1 large head (7 - 8 inches wide)
- egg whites - 1/4 cup
- shredded Mozzarella/Tex Mex cheese - 1/2 cup plus 3/4 cup
- Italian herb seasoning - 1 t
- fresh ground black pepper - 1/4 t
- salt - pinch
- marinara sauce for dipping -
Instructions:
Place florets in a food processor and process until rice or coarse texture.
Bake in preheated 375 degree oven for 20 minutes. Remove from oven and place in a bowl lined with a linen towel. Let cool for 15 - 2o minutes. Fold the towel, squeeze the liquid out of the cauliflower as hard as you can. Do this a few times until barely any liquid comes out.
Increase oven temperature to 450 degrees. In a bowl, mix together cauliflower, egg whites, 1/2 cup cheese, herb seasoning, pepper and salt. Place mixture on a baking sheet lined with parchment paper. Flatten into a 9 x 7 inch rectangle and 1/4 inch thick. Bake for 18 minutes, remove from oven and top with 3/4 cup cheese. Return to oven bake for 5 minutes, then broil until cheese turns golden brown.
Cut into 12 breadsticks and serve hot with warm marinara sauce.
