Cheese and Pepperoni Pizza Bites
Ingredients:
- pizza dough, room temperature - 1 pound
- flour - for rolling out dough
- marinara sauce - 1/2 cup plus more for serving
- shredded mozzrella cheese - 1 1/2 cups
- sliced pepperoni - 1 cup
- egg - 1
- shredded Parmesan cheese - 3 T
- dried oregano or pizza seasoning -
Instructions:
Lightly flour work surface, divide dough into 19 equal portions. Roll each piece of dough into a 3 inch circle. Add 1 - 2 tsp marinara sauce in the center of each piece of dough, sprinkle marinara with a little cheese and one slice of pepperoni. Pull all of the sides up to meet in the center, firmly pinching to seal the fillings inside the dough pocket.
Beginning in the center, place the filled dough balls seam side down in a single layer in a greased 9 inch round baking pan. (DO NOT overlap the dough balls.)
In a bowl, whisk together egg and 1 T water. Brush eggwash over the tops of the dough balls, sprinkle Parmesan cheese over the top.
Bake in a preheated 375 degree oven for 25 - 27 minutes until golden brown and bubbly. Remove from oven, sprinkle tops with oregano OR pizza seasoning . Serve hot with additional warm marinara sauce for dipping.
