Cheese Puffs
Ingredients:
- pastry puff sheets, thawed - 1 package
- flour - for dusting
- finely shredded sharp cheddar cheese - 5 ounces
- cream cheese, softened - 3 ounces
- cayenne pepper - 1/4 tsp
- Parmesan cheese - for sprinkling
- egg - 1 large
- water - 1 tsp
Instructions:
Place cheddar cheese, cream cheese and cayenne pepper in a food processor, mix well.
Sprinkle flour on work surface, roll pastry sheet out to 12 x 12 inches. In a small bowl, mix egg and water together for the egg wash. Cut pastry into 2 1/2 inch circles. Spread egg wash over each circle; fill with 1/2 tsp of cheese mixture. Pull the puff sides together, crimping in the middle. (Make sure edges are tight so the cheese doesn't seap out.) Cover each puff with egg wash.
Place puffs 1/2 inch apart on a parchment paper lined baking sheet. Sprinkle each puff with Parmesan cheese. Bake in a preheated 400 degree oven for 18 - 20 minutes until golden brown.
