Cheesey Bites
Ingredients:
- buttermilk biscuits (not the flaky kind) - 2 cans
- mozzarella - cut into 20 cubes
- olive oil - 3 T
- cloves garlic, minced - 6
- crushed red pepper flakes - pinch
- butter - 2 T
- white wine - 1/4 c
- salt - 1/4 t
- shredded mozzarella cheese - 1 c
- shredded parmesan cheese - 1/2 c
- salt and basil - to desired taste
Instructions:
Flatten each biscuit, place a mozzarella cube in the center and wrap the dough around it to form a ball. In a skillet heat the olive oil over medium low heat. Add the garlic and red pepper flakes; sauté for 1 - 2 minutes. Add butter, stir until melted. Slowly pour in wine and salt, continue cooking for 1 - 2 minutes.
Roll the dough balls into the butter mixture and place the balls, seam side up in a mini muffin pan. Combine the cheeses and pile on top each dough ball.
Bake in a preheated 450 degree oven for 8 - 10 minutes. Remove from oven, brush with remaining garlic butter, sprinkle with salt and basil. Serve warm.
