Chicken and Cheese Tortillas
Ingredients:
- cooked, shredded chicken - 3 cups
- cream cheese, softened - 6 ounces
- sour cream - 1/3 cup
- salsa - 1/2 cup
- shredded sharp cheddar cheese - 1 1/2 cups
- chopped baby spinach, stems removed - 1 1/2 cups
- coarse salt and fresh black pepper - to desired taste
- flour tortillas - 9 - 10 6 inch
- oil for frying -
Instructions:
In a bowl mix together chicken, cream cheese, sour cream, salsa, cheddar and spinach. Season with salt and pepper. Place 2 heaping T of chicken mixture off center on each tortilla, spread out like a log. Roll tortillas up, place on a platter seam side down on a platter. Repeat with remaining tortillas.
Add oil to a large skillet to generously cover bottom of skillet. Heat on medium to medium low heat, cook tortillas in batches, turning to brown each side. Place on paper towels to drain.
Serve with your choice of dipping sauce, sour cream, quacamole, salsa, taco sauce, ranch dressing, etc.
