Chicken Enchilada Rollups
Ingredients:
- cream cheese, softened - 2 - 8 ounce packages
- Mexican blend cheese - 1 1/3 cups
- garlic, finely minced - 1 tsp
- chili powder - 1 1/2 tsp
- cumin - 1 tsp
- salt - to desired taste
- southwest flavored rotisserie chicken, shredded - 1 small
- green onions, chopped - 4
- Rotel tomatoes - 10 ounce can
- jalapeno cheddar tortillas - 1 package
Instructions:
In a bowl, blend cheeses together. Add remaining ingredients; mix well. Cover, place in the refrigerator for at least one hour. To serve -- spread one heaping spoonful onto tortilla. Roll tortilla up and cut into slices.
