Chicken Zucchini Meatballs
Ingredients:
- ground chicken breast - 1 pound
- grated zucchini - 2 cups
- green onions, sliced - 2 - 3
- cilantro, minced - 3 - 4 T
- garlic - 1 clove
- salt - 1 t
- pepper - 1/2 t
- olive oil, for cooking -
Instructions:
In a bowl, mix together chicken, zucchini, green onion, cilantro, garlic, salt, and pepper. Heat a drizzle of oil in a skillet over medium heat. Using a medium scoop place meatballs in the pan. Cook for 5 - 6 minutes. Flip and cook an additional 4 - 5 minutes, or until golden brown.
Grease a baking sheet with olive oil, place meatballs on the pan. Drizzle meatballs with additional oil. Bake in a preheated 400 degree oven for 20 - 25 minutes, or until cooked through. If desired, place under the broiler for an additional 2 - 3 minutes or until browned on top.
Serve with guacamole, salsa, etc.
