Cucumber Cream Cheese Sandwiches
Ingredients:
- cream cheese, softened - 4 ounces
- chopped fresh dill - 2 T
- zest, juice from 1/2 lemon -
- butter -
- kosher salt and freshly ground pepper - to desired taste
- high quality white or whole grain bread - 6 slices
- cucumber, seeded, thinly sliced thoroughly dried with paper towels - 1/2 large
Instructions:
Combine cream cheese, dill, zest and juice, add salt and pepper to desired taste. Butter each slice of bread. Spread cream cheese mixture onto each slice. Lay cucumber slices on cream cheese mixture on 3 slices of bread. Top with remaining bread cheese mixture down. Slice off the crusts. Serve immediately or wrap in plastic wrap and place in refrigerator for up to 24 hours. Before serving, slice each sandwich into 4 triangles.
