French Onion Cheese Bread
Ingredients:
- butter - 3 T
- onion, peeled, sliced thin - 3
- garlic, chopped - 2 cloves
- fresh thyme, leaves only - 3 sprigs
- sugar - 1 T
- Kosher salt - 1 t
- black pepper - 1 t
- white balsamic vinegar - 1 T
- French rolls, sliced in half - 4
- shredded Gruyere OR Fontina cheese - 2 cups
Instructions:
In a saucepan, melt butter over medium heat. Add onions, garlic and thyme leaves, cook for 10 minutes, stir occasionally. Lower heat to medium low, cover, cook for 1 hour, stir occasionally. Add sugar, kosher salt and pepper; cook for 10 minutes. Add vinegar; cook for an additional 10 minutes or until onions are caramelized.
Place bread halves on a baking sheet, cut side up. Sprinkle shredded cheese evenly over rolls, spoon caramelized onions on top.
Bake in a preheated 400 degree oven for 10 - 15 minutes or until cheese is melted and bread is golden brown. Slice, serve immediately.
