Fried Mac and Cheese
Ingredients:
- elbow macaroni - 1/2 pound
- butter - 1 T
- flour - 1 T
- milk, warmed - 1 c plus
- Cheddar Cheese - 1/2 pound
- Smoked Gouda - 1/2 pound
- salt and pepper - to desired taste
- egg - 1
- milk - 1 T
- bread crumbs - 1 1/2 c
- Italian seasoning - 1 t
Instructions:
Cook macaroni per package directions. Drain and rinse with cold water; set aside.
Melt butter in a pan, over medium heat and sprinkle in flour; whisk together. Cook for 2 minutes, whisk in milk and stir to get rid of lumps. Cook until sauce thickens, about 2 minutes. Remove from heat, add cheese, stir until melted and smooth. Season with salt and pepper. Pour cheese over macaroni and stir to combine. Pour into a shallow pan, place in refrigerator for 2 hours. Use a cookie scoop and form macaroni and cheese into balls. Place on a wax paper lined cookie sheet and freeze overnight.
In a bowl mix together egg and 1 T milk to make a wash. In a second bowl mix together bread crumbs and seasoning. Dip macaroni and cheese balls into egg and then cover with bread crumb mixture. Heat oil to 350 degrees and fry macaroni and cheese balls until golden brown and cooked through. About 5 minutes. Serve with marinara sauce. Yields about 36 balls.
