Hawaiian Chicken Salad
Ingredients:
- chicken breasts, boneless, skinless - 1 1/2 pounds
- garlic clove - 1 whole
- fresh pineapple chunks - 1 cup
- coarsely chopped macadamia nuts - 1/4 cup
- scallions, sliced - 3
- salt - 1/2 tsp
- fresh ground black pepper - 1/2 tsp
- paprika - 1/2 tsp
- cayenne pepper - 1/4 tsp
- Dijon mustard - 2 T
- plain Greek yogurt - 1 cup
Instructions:
Cook chicken and garlic clove in boiling water. When done, remove chicken from water, cool slightly; shred. In a bowl, combine chicken, pineapple, nuts and scallions; set aside.
In a small bowl, whisk together salt, pepper, paprika, cayenne pepper, mustard and yogurt. Add yogurt mixture to the chicken mixture; toss well to combine. Serve on bread, crackers or salad greens.
