Kale and Mozzarella Bruschetta
Ingredients:
- baguette, sliced diagonally - 1 loaf
- extra virgin olive oil - 1/4 cup plus 2 T
- garlic, peeled - 2 cloves
- curly kale, roughly chopped - 1 bunch
- salt - 1/2 t
- black pepper - 1/4 t
- water - 1/2 cup
- mozzarella cheese - 16 ounces
Instructions:
Preheat oven to broil. Place baguette slices on a baking sheet. Using a pastry brush, brush 1/4 cup olive oil over the tops of the baguette slices. Broil until tops are slightly brown and crispy.
While bread is browning, heat 2 T olive oil in a saute pan over medium heat. Grate one garlic clove into the pan. Add kale, salt and pepper; stir. Add water, cover pan, cook until kale is wilted and tender; set aside. Rub remaining garlic over the tops of baguette slices. Spread 1 - 2 T mozzarella on each slice of bread and top with a spoonful of sauteed kale. Serve warm.
