Margarita Phyllo Bites
Ingredients:
- plum tomatoes, diced - 2
- garlic, minced - 1 clove
- salt and pepper - pinch of each
- olive oil - 1 tsp
- mimi phyllo shells - 2 boxes (30 shells)
- fresh mozzarella cheese, diced 1/4 inch - 8 ounces
- fresh basil, sliced - for garnish
Instructions:
In a bowl, combine tomatoes, garlic, salt, pepper and olive oil.
Fill phyllo shells with diced mozzarella. Bake in a preheated 400 degree oven for 5 minutes or until cheese is melted. Remove from oven and top with tomatoes.
Return to oven for additional 5 minutes for tomatoes to soften. Remove from oven, garnish with basil. Serve.
