Mexican Shrimp
Ingredients:
- Roma tomatoes, diced - 3
- diced red onion - 1/2 cup
- chopped cilantro - 1/3 cup
- jalapeno, seeded, finely diced - 1
- limes - 2
- salt - to desired taste
- cocktail sauce - 12 ounce jar
- shrimp, deveined, cooked - 1 pound
- avocados, chopped - 2
Instructions:
In a bowl, combine tomatoes, onion, cilantro and jalapeno. Squeeze juice from 1 lime over tomato mixture, season with salt; toss. Add cocktail sauce, stir well. Cover, place in refrigerator.
Cut each shrimp into 2 - 3 pieces. Mix shrimp with tomato/cocktail sauce mixture; stir well. Cover, place in refrigerator until serving time.
To serve, chop avocado, squeeze juice from 1 lime over chopped avocado. Place tomato/shrimp mixture in serving bowl, garnish with avocado.
Serve with tortilla chips.
