Mini Baked Potatoes
Ingredients:
- small potatoes - 20 or desired amount
- olive oil -
- kosher salt -
- sour cream - 1/2 cup
- crumbled blu cheese - 1/4 cup
- chopped fresh chives - 2 T
Instructions:
Wash and dry potatoes, coat with olive oil and Kosher salt. Place on baking sheet. Bake in a preheated 350 degree oven for 45 - 50 min or until done. In a bowl combine sour cream and blue cheese. When potatoes are done, cut a X in the top of each potato, press gently to open. Top with a dollop of cheese mixture, garnish with your favorite toppings - chives, bacon, grated cheese, etc
