8 ounces cream cheese, soft
1/2 c butter, soft
1 1/2 c powdered sugar
1 1/2 t mint extract or to desired taste
green gel food coloring
2 c mini chocolate chips, divided
In a bowl, cream together cream cheese and butter, gradually beat in powdered sugar. Beat in extract and food coloring until desired color is reached, stir in 1 c chocolate chips.
Place in refrigerator for at least one hour, until mixture is solid enough to form into a ball.
Roll cheese ball in 1 c chocolate chips to cover cheese ball.
Wrap cheese ball with plastic wrap, place in refrigerator until ready to serve.
Place cheese ball on serving dish, serve with graham crackers, vanilla wafers, animal crackers, etc.
