Monte Cristo Puffs
Ingredients:
- white sandwich bread, cut into 1/2 inch cubes - 4 slices
- sliced deli ham, coarsely chopped - 4 ounces
- Swiss cheese, grated - 4 ounces
- cream cheese, softened - 2 ounces
- eggs - 2
- Dijon mustard - 2 t
- strawberry jam - 2 T
Instructions:
Grease the cups of 2 mini muffin pans, set aside. In a bowl whisk together cream cheese, eggs and mustard until smooth. Sir in bread, ham and cheese. Spoon about 1 T of mixture into each cup. Bake in a preheated 425 degree oven for 10 - 12 minutes, until light golden brown. Remove puffs from pan and place on wire to cool. Place a small dab of jam on each puff. Yields 24
