Mozzarella and Basil Bites
Ingredients:
- fresh mozzarella (about 15, cut in half to make 30) - 1 package
- egg - 1
- water - 1 T
- fresh basil leaves - 15 plus more if desired for garnish
- fresh wonton wrappers - 30 sheets
- canola oil - 1 cup
- tomato sauce, your favorite - 1 cup
Instructions:
Drain mozzarella, blot dry with a paper towel; set aside. Whisk egg and water together with a fork; set aside.
Wash and dry the basil leaves, stack 5 together, roll them together, cut them length wise into little strips. Place a piece of moxarella on wonton, top basil stips. Brush edges of wonton with the egg wash. Press ends together and tuck the ends underneath. Let rest for 5 - 10 minutes to seal.
In a large pan heat oil to 350 degrees. DO NOT overheat the oil. DO NOT use more than 1 cup oil. Place 8 filled wrappers in the pan, cook until golden brown on each side about 1 minute. Drain on paper towels. Sprinkle with grated cheese. Serve immediately with your warm tomato sauce.
