Onion Rings
Ingredients:
- vegetable oil - for frying
- nonfat dry milk - 1 - 3.2 ounce packet
- cornstarch - 1/2 cup
- egg whites - 8
- Kosher salt -
- baking powder - 1/2 t
- red onion, sliced 1/4 inch thick - 3 medium
Instructions:
Place a wire rack on a baking pan, place pan in a preheated 250 degree oven. In a bowl, whisk together dry milk, cornstarch, egg whites, 2 t salt and baking powder until mixture is lump free. Dip onion rings into batter, fry in preheated 350 degree oil, about 1 minute, turn halfway through. Drain on paper towel lined plate, season with salt, then place on prepared pan in the oven to keep warm.
