Pecan Cheese Wafers
Ingredients:
- flour - 6 T plus more for dusting
- Kosher salt - 1/4 t
- crushed red chile flakes - 1/8 t
- shredded sharp cheddar cheese - 2 ounces
- butter, softened - 2 T
- heavy cream - 1 T
- egg white, lightly beaten - 1
- pecan halves - 1/2 cup
Instructions:
In a food processor, pulse flour, salt and chile flakes until combined. Add cheese, butter and cream; pulse for 10 seconds until dough just holds together. Form dough into a disk, wrap in plastic wrap; place in refrigerator for 1 hour.
On a lightly floured work surface, roll dough into a 12 x 10 inch rectangle about 1/8 inch thick. Using a 2 inch round cutter, cut out rolls. With a metal spatula, place disks on parchment paper lined baking sheets; press scraps together and reroll. Lightly brush bottoms of pecan halves with egg white; press pecans into the top of the wafers.
Bake in a preheated 325 degree oven for 15 minutes, until firm and crisp. Cool completely before serving. Yields -- 2 1/2 dozen
