2 1/2 c shredded extra-sharp white cheddar cheese
2 1/2 c shredded extra-sharp orange cheddar cheese
7 ounce jar pimientos, drained, finely chopped
3/4 c mayonnaise
1/2 t freshly ground black pepper
1/2 t garlic powder
cayenne pepper
40 slices baguette, toasted
4 strips cooked bacon, crumbled
In a bowl, with mixer on low speed combine the cheeses. Add pimientos, mayonnaise, black pepper and garlic powder; blend at low speed. Season with cayenne pepper to taste. Cover and place in refrigerator for 2 hours.
Spread cheese mixture on the toasted baguettes, top with bacon and bake at 400 degrees for 2 minutes until cheese is melted and browned. Serve immediately.
