Pizza Potato Skins
Ingredients:
- russet potatoes, scrubbed - 6 small
- olive oil - 1/4 cup
- shredded mozzarella cheese - to desired taste
- pizza sauce, your favorite - to desired taste
- pepperoni, diced - to desired taste
- Kosher OR sea salt -
- parsley -
Instructions:
Brush potatoes with olive oil and sprinkle with a bit of salt. Place on a baking sheet, bake in preheated 400 degree oven for 35 minutes or until potatoes are tender. Cool for 5 minutes. Cut potatoes in half lenthwise, scoop out the inside of the potato leaving just a bit on the skin. Brush the inside of the potato skins with olive oil and place in the oven again for 5 - 10, turn them over and bake for another 5 - 10 minutes until crisp.
Assemble -- fill each skin with pizza sauce, mozzarella and pepperoni. Return to oven for cheese to melt. Garnish with parsley. Serve immediately.
