Reuben Egg Rolls
Ingredients:
- deli liced corned beef, diced small - 5.5 ounces
- deli sliced Swiss Cheese, small cube - 5 ounces
- sauerkraut - 1/2 c
- Thousand Island Dressing - 2 T
- egg roll wrappers - 10
- oil -
Instructions:
In a bowl mix together corned beef, cheese, sauerkraut and dressing. Place 2 - 3 large tablespoons of mixture on each egg roll wrapper. Fold over one corner, then fold in the two sides and tightly roll towards the last corner. Brush water on ends of wrapper to seal. Heat 1/4 - 1/2 inch oil and fry egg rolls in hot oil, 3 - 4 minutes on each side until golden brown. Let cool and serve.
