Roasted Shrimp
Ingredients:
- shrimp, peel, vein removed - 1/2 pound (16 - 20 large)
- garlic, finely chopped - 2 cloves
- extra virgin olive oil - 2 T
- Kosher salt - 1/2 tsp
- cracked black pepper - 1/4 tsp
- cocktail sauce -
Instructions:
In a bowl, toss shrimp with garlic, olive oil, salt and pepper. Spread shrimp in a single layer on a rimmed baking sheet.
Roast in a preheated 450 degree oven for 3 minutes, turn shrimp over, continue roasting until the shrimp is opaque and firm, for 2 - 4 minutes. Place shrimp in a shallow dish, cover partially, place in the refrigerator for 2 hours. Serve with cocktail sauce.
