Thyme Crackers
Ingredients:
- flour - 2 cups plus more for work surface
- coarsely chopped thyme plus sprigs for garnish - 3 T
- coarse salt - 1 1/2 tsp plus more for garnish
- sugar - 1 tsp
- cold butter, cut into pieces - 3 T
- heavy cream - 1 cup
- egg white, lightly beaten - 1 large
Instructions:
In a food processor, pulse flour, thyme, salt and sugar until combined. Add butter; pulse until mixture resembles coarse meal. With machine running, add cream; process until dough forms.
Briefly knead dough on a lightly floured work surface. Divide dough into 4 pieces; shape into rectangles. Wrap each in plastic; place in refrigerator until firm, about 30 minutes.
On a lightly floured surface, roll 1 piece of dough into a very thin rectangle. Place dough on a baking sheet. Score dough into strips of desired size. Brush with egg white, garnish each strip with salt and a thyme sprig. Repeat with remaining dough.
Bake in a preheated 375 degree oven for 15 - 20 minutes or until golden brown and crisp. Cool on a wire rack. Break into individual crackers
