Tomato Caprese
Ingredients:
- basil - 1 1/2 cups
- garlic - 4 - 5 cloves
- grated Parmesan cheese - 1/4 cup
- lemon juice - 1/8 cup
- olive oil, divided - 1/8 cup plus 2 T
- roma tomatoes, sliced - 3
- fresh Mozzarella balls - 1 container
Instructions:
Prepare pesto -- in food processor, mix together basil, garlic and parmesan cheese. Add lemon juice and 1/8 cup olive oil. Mix until well blended.
Assemble -- drizzle 2 T olive oil over tomato slices, top with pesto and mozzarella ball. Serve
