Zucchini Bites
Ingredients:
- butter - for coating the pans
- eggs, lightly beaten - 2 large
- grated zucchini - 2 cups
- yellow onion, finely chopped - 1/2
- grated cheddar cheese - 1/2 cup
- breadcrumbs - 1/2 cup
- finely chopped fresh parsley - 1/2 cup
- Kosher salt - 1/2 tsp
- fresh ground pepper - pinch
Instructions:
Coat the cups of a mini muffin pan with butter; set aside.
In a bowl, fold together, beaten eggs, zucchini, onion, cheese, breadcrumbs, parsley, salt and pepper. (Batter will be sticky.) Fill each mini muffin cup just to the top, with about 1 tablespoon of mixture.
Bake in a preheated 400 degree oven for 15 - 18 minutes, or until the tops are browned and set. Cool in the pan for 10 minutes, remove, place on a wire rack to cool completely.
