Hot Buttered Rum Coffee
Ingredients:
- heavy cream - 1 cup
- dark brown sugar - 1/4 cup
- butterscotch schnapps - 1/4 cup
- dark rum - 2 T
- hot coffee - 6 cups
- butterscotch schnapps - 1 1/2 cups
- half & half - 1 cup
- dark rum - 1/2 cup
- Irish cream liqueur - 1/2 cup
- dark brown sugar - 3 T
- cinnamon - garnish
Instructions:
Prepare buttered rum whipped cream -- in a cold large bowl, beat 1 cup heavy cream on high until it begins to thicken. Add 1/4 cup brown sugar, 1/4 cup butterscotch schnapps and 2 T dark rum, beat until medium peaks form. Cover, place in refrigerator for several hours before serving.
Prepare cocktails -- in a large thermal carafe, combine 6 cups coffee, 1 1/2 cups butterscotch schnapps, 1 cup half & half, 1/2 cup dark rum, 1/2 cup Irish cream liqueur and 3 Tablespoons dark brown sugar.
Serve in mugs, top with a dollop of buttered rum whipped cream and a sprinkle of cinnamon.
