Apple Cinnamon Loaf
Ingredients:
- frozen dinner rolls, thawed - 16
- granny smith apples, peeled, chopped - 3
- brown sugar - 1/3 cup
- chopped pecans - 1/2 cup
- cinnamon - 1 t
- lemon juice - 2 t
- lemon zest - from 1/2 lemon
- powdered sugar - 1 cup
- water - 3 - 4 t
- vanilla extract - 1/2 t
- almond flavoring - 1/2 t
Instructions:
In a bowl combine apples, sugar, nuts, cinnamon and lemon juice and zest. Cut thawed rolls in half, flatten each roll into a 2 - 3 inch circle. Place 1 t apple mixture in center of each dough circle. Pinch edges together to seal, form ball. Place filled balls in a greased 9 x 5 inch loaf pan. Spoon remaining apple mixture over the top.
Cover with greased plastic wrap; let rise until double. Bake in preheated 350 degree oven for 40 - 45 minutes.Cover with foil the last 10 minutes of baking to prevent over browning. Cool for 10 minutes.
Prepare icing -- in a bowl, combine powdered sugar, water, vanilla and almond flavoring until smooth; drizzle over warm loaf.
