Apple Fritter Bread
Ingredients:
- light brown sugar - 1/3 cup
- cinnamon - 1 tsp
- sugar - 2/3 cup
- butter, soft - 1/2 cup
- eggs - 2
- vanilla extract - 1 1/2 tsp
- flour - 1 1/2 cups
- baking powder - 1 3/4 tsp
- milk - 1/2 cup
- baking apples, peeled, chopped - 2
- sugar - 2 T
- cinnamon - 1 tsp
- Glaze --
- powdered sugar - 1/2 cup
- milk - 1 - 3 T to desired consistency
Instructions:
In a bowl, mix together apples, 2 T sugar and 1 tsp cinnamon together; set side.
In a small bowl, mix together 1/3 cup brown sugar and 1 tsp cinnamon. (If desired add chopped pecans or walnuts.) Set aside.
In a bowl, beat together sugar and butter until smooth and creamy. Beat in eggs, 1 at a time, until blended in; stir in vanilla.
In a bowl, whisk flour and baking powder together, add to butter mixture; stir until blended. Stir in milk until smooth.
Pour half the batter into a greased 9 x 5 inch loaf pan; add half the apple mixture, half the brown sugar/ cinnamon mixture. Lightly pat apple mixture into batter.
Pour remaining batter over apple layer, top with remaining apple mixture, and remaining brown sugar/ cinnamon mixture.
Lightly pat apples into batter; with a knife swirl brown sugar mixture through apples.
Bake in the preheated 350 degree oven for 50 - 60 minutes or until a toothpick inserted in the center of the loaf comes out clean.
Prepare glaze -- in a bowl, mix together powdered sugar and milk. Let bread cool for 15 minutes before drizzling glaze over top.
