1 can refrigerated grands biscuits, your choice of flavor
Filling – 2 granny smith apples, finely diced
1 t lemon juice
1/3 c brown sugar
2 T sugar
1/2 t vanilla extract
1 t ground cinnamon
1/4 t ground ginger
1/2 t ground nutmeg
1/4 t ground allspice
In a sauce pan add all filling ingredients. Over medium heat; cook, stir occasionally, until apples have browned and softened and sauce has thickened. Set aside to cool.
Spray a 9 x 5 inch loaf pan with cooking spray.
With a knife cut each biscuit in half horizontally to make 16 biscuit halves, flatten each half with your hand to thin them out.
Place a T of apple filling onto each biscuit half. Stack biscuit halves on top of one another to form four stacks with four biscuit halves each.
Place the stacks in a greased loaf pan, arranging so the ends of both sides have biscuit without filling touching the pan. (You’ll have to sandwich two filling-sides together)
Cover pan with aluminum foil and bake at 350 degrees for 30 minutes. Remove aluminum foil and bake until golden brown and cooked through, check every 5 minutes. Cool for 5 minutes in the pan, remove; drizzle glaze over top.
Glaze – 1 ½ c powdered sugar
¼ c half & half
1 t vanilla
In a bowl whisk together powdered sugar and half & half, adding more if necessary to reach the desired consistency. Add vanilla and whisk. Drizzle over fritter loaf.
