Banana Bread
Ingredients:
- butter, softened - 1/2 cup
- sugar - 1 cup
- vanilla extract - 1 t
- eggs - 2
- flour - 1/1/2 cup
- baking soda - 1 t
- salt - 1/2 t
- mashed ripe banana - 1 cup
- sour cream - 1/2 cup
- nuts, optional - to desired taste
Instructions:
Grease a 9 x 5 inch loaf baking pan, sprinkle 1 t sugar over bottom of pan; set aside.
In a bowl beat butter and sugar until very creamy, add eggs and vanilla, beat again. In a another bowl sift together flour, baking soda and salt. Slowly add to the butter mixture while the mixer is running. DO NOT over beat. By hand stir in bananas, sour cream and nuts until incorporated. Pour batter into prepared pan.
Bake in a preheated 350 degree oven for 65 minutes until knife inserted in the center comes out clean. Remove from oven, cool in the pan for 10 minutes, remove and place on wire rack to cool. Store in a sealed container.
