Blueberry Bread with Lemon Glaze
Ingredients:
- butter, melted - 1/3 cup
- sugar - 1 cup
- eggs - 2
- vanilla extract - 1/2 tsp
- flour - 1 1/2 cups
- baking powder - 1 tsp
- salt - 1 tsp
- milk - 1/2 cup
- grated lemon zest - 2 T
- blueberries, fresh or frozen - 1 cup
- flour - 2 T
- Glaze --
- fresh squeezed lemon juice - 2 T
- powdered sugar - 1/2 cup
Instructions:
Butter an 8 x 4 inch loaf pan, line bottom and two sides of pan with the parchment paper; set aside.
In a bowl, beat together butter, 1 cup sugar, eggs and vanilla.
In a second bowl, combine flour, baking powder and salt; stir into egg mixture alternately with milk. Toss blueberries with 2 T flour. This will help prevent blueberries from sinking.
Fold in zest and blueberries into the batter. Do it carefully and fast. Pour batter into prepared pan.
Bake in preheated 350 degree oven for 50 - 60 minutes, until a toothpick inserted into center of the loaf comes out clean. Cool bread in pan for 40 minutes on a wire rack. Remove bread from pan, cool completely, drizzle glaze over top.
Prepare glaze -- in a bowl, beat lemon juice and 1/2 cup powdered sugar, until smooth. Drizzle glaze over the top of the bread. Some glaze will drip down the sides of the bread.
