Caprese Bread
Ingredients:
- flour - 1 1/4 c
- bread flour - 1 c
- baking powder - 2 t
- baking soda - 1/2 t
- salt - 1 1/4 t
- cubed, fresh mozzarella cheese - 3 1/2 - 4 ounces
- fresh basil - 2 T
- chopped sun dried tomatoes (not packed) - 1/3 c
- eggs - 2
- grape seed oil or extra virgin olive oil - 2 1/2 T
- buttermilk - 1 1/4 c
Instructions:
In a bowl, combine and mix well flour, baking powder, baking soda and salt. Add basil, mozzarella and tomatoes to flour mixture; thoroughly mix. In another bowl whisk together eggs, oil and buttermilk. Pour into flour mixture, mix until well combined. (dough will be sticky)
Spread evenly into a greased 8 x 4 inch pan. Bake in a preheated 350 degree oven for 40 - 45 minutes, until toothpick inserted in center comes out clean.
