Cheese Bites
Ingredients:
- buttermilk biscuits (not the flaky ones) - 2 cans
- mozzarella cut into cubes - 20
- olive oil - 3 T
- garlic, minced - 6 cloves
- crushed red pepper flakes - pinch
- butter - 2 T
- white wine - 1/4 cup
- salt - 1/4 t
- shredded mozzarella cheese - 1 cup
- shredded parmesan cheese - 1/2 cup
- salt - to desired taste
- basil - to desired taste
Instructions:
Flatten each biscuit, place a mozzarella ball in the center, wrap the dough around it to form a ball. In a skillet, heat oil over medium low heat. Add garlic and pepper flakes; saute for 1 - 2 minutes. Add butter, stir until melted. Slowly pour in the wine and salt, continue cooking for 1 - 2 minutes. Roll the dough balls into the butter. Place the balls in a mini muffin pan (open side up). In a bowl combine the shredded cheeses, pile on each dough ball.
Bake in a preheated 450 degree oven for 8 - 10 minutes. Remove from oven. Brush with remaining garlic butter. Sprinkle with salt and basil to taste. Serve warm.
