Chocolate Chip Zuchinni Bread
Ingredients:
- flour - 3 cups
- baking powder - 1 T
- ground cinnamon - 1 1/2 t
- salt - 1 t
- egg, lightly beaten - 2
- coarsely shredded unpeeled zuchinni - 2 1/2 cups
- sugar - 2 cups
- oil - 1 cup
- vanilla - 2 t
- nuts - 1 cup
- chocolate chips - 1 1/4 cups
Instructions:
In a bowl stir together flour, baking powder, cinnamon and salt. Make a well in the center of flour mixture. In a separate bowl combine eggs, zucchini, sugar, oil and vanilla. Add zucchini mixture to flour mixture. Stir just until moistened (batter will be lumpy). Fold in nuts and 3/4 cup chocolate chips. Evenly spread batter into 2 greased 8 x 4 inch loaf pan.
Bake in a preheated 350 degree oven for 55 minutes or until a toothpick inserted near the centers comes out clean. Cool in pans on a wire rack for 10 minutes. Remove from pans; cool completely on wire rack.
Melt 1/2 c chocolate chips, drizzle over loaves. Wrap and store overnight before slicing.
