Eggnog Bread with Rum Glaze
Ingredients:
- eggs - 2
- eggnog (regular) - 1 1/2 cups
- Spiced Rum - 2 tsp
- sugar - 1 cup
- vanilla extract - 1 tsp
- butter, room temperature - 1/2 cup
- flour - 2 1/4 cups
- instant French Vanilla pudding - 3.4 ounce package
- baking powder - 2 tsp
- salt - 1/2 tsp
- ground nutmeg - 1/2 tsp
- shifted powdered sugar - 1 cup
- eggnog - 2 tsp
- Spiced Rum - 2 T
- ground nutmeg - 1/8 tsp
Instructions:
In a bowl, mix together eggs, 1 1/2 cups eggnog, 2 tsp Rum, sugar, vanilla and butter. Butter will remain clumpy.
In a bowl, sift together flour, dry pudding mix, baking powder, salt and 1/2 tsp nutmeg. Add dry ingredients to the wet ingredients, blend together. DO NOT over mix. (Butter will remain clumpy and will melt while baking.) Dough will be thick. Pour into greased and floured pan. Bake in a preheated 350 degree oven, regular loaf pan 45 - 55 minutes, mini loaves for 25 - 30 minutes or until a toothpick comes out clean. Cool and glaze.
Prepare rum glaze -- in a bowl, whisk together powdered sugar, 2 tsp eggnog, 2 T spiced Rum and 1/8 tsp nutmeg. Pour over bread.
