Glazed Apple Bread
Ingredients:
- shredded peeled baking apples - 1 1/2 cups
- brown sugar - 1 cup
- buttermilk - 1/2 cup
- vegetable oil - 1/2 cup
- eggs, lightly beaten - 4
- flour - 3
- chopped pecans - 1/2 cup
- baking soda - 2 t
- cinnamon - 2 t
- salt - 1 t
- nutmeg - 1 t
- butter - 2 T
- packed brown sugar - 1/4 cup
- milk - 1 T
- powdered sugar, sifted - 1/2 cup
Instructions:
Grease only the bottoms of 2 - 8 x 4 inch loaf pans; set aside.
In a bowl, stir together apples, 1 cup brown sugar, buttermilk, oil and eggs. Stir in flour, pecans, baking soda, cinnamon, salt and nutmeg; just until dry ingredients are moistened. Pour into prepared pans.
Bake in preheated 350 degree oven for 45 - 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on cooling rack. Remove from pans and place loaves on cooling rack to cool completely.
Prepare glaze - in a saucepan, melt butter over medium heat. Stir in 1/4 cup brown sugar. Bring to to a boil, stirring constantly; reduce heat to low. Boil and stir for 2 minutes, stir in 2 T milk. Heat to boiling; remove from heat. Cool for 30 minutes, gradually stir in powdered sugar. Place saucepan of glaze in bowl of cold water. Beat with a spoon until smooth and thin enough to drizzle. If glaze becomes too stiff, stir in 1/2 t milk at a time until desired constency is reached. Drizzle glaze over loaves. Wrap tightly, store at room temperature up to 4 days or place in refrigerator up to 10 days.
