2 jalapenos (seeded and chopped)
2/3 c sugar
1/4 c honey
1/2 c butter, melted
2 eggs, beaten
1/2 t baking soda
1 c buttermilk
1/2 t salt
1 c cornmeal
1 c flour
3/4 c shredded sharp cheddar cheese
In a bowl mix together sugar, honey, and melted butter until combined. Add eggs, baking soda and buttermilk, whisk until mixture is well combined. Add salt, cornmeal and flour.
Mix only until moistened. DO NOT OVER MIX.
Gently stir in jalapeno and cheddar.
Place in greased muffin pan or use paper liners, fill until slightly heaped.
Bake at 350 degrees for 15-20 minutes, or until golden brown and a toothpick comes out with moist crumbs.
Goes great with chili or lasagna.
