3 T butter
2 yellow onions
2 T brown sugar
2 c flour
1 T baking powder
1 t kosher salt
1 t sugar
1 egg
1 c milk
1/4 c corn oil
6 slices bacon, cooked, crumbled
5 ounces cheddar cheese, shredded
Cut onions in half then into 1/4 inch slices.
Cook bacon, crumble and set aside.
Place 2 T butter in a 9-10 inch oven proof skillet on medium heat, saute onions until they are soft and begin to caramelize and very brown. Remove onions from pan and add remaining butter. Remove from heat, sprinkle brown sugar in pan and return onions to pan, sprinkle bacon on top of onions.
In a bowl combine flour, baking powder, salt, sugar and cheese.
In another bowl whisk together egg, milk and oil until thoroughly combined.
Add to dry ingredients, quickly stir together.
Spoon batter on top of the onions, smooth with a fork.
Bake at 350 degrees for 35 minutes until toothpick inserted in center comes out clean.
Let rest for 5 minutes, then place a plate slightly larger then the skillet upside down on the bread and flip the pan over.
Slice and serve warm.
