Zucchini Bread with Walnuts
Ingredients:
- walnut halves, toasted - 1 cup
- flour - 2 cups
- baking powder - 1/2 tsp
- baking soda - 1/2 tsp
- salt - 1/2 tsp
- sugar - 3/4 cup
- sugar - 2 T
- eggs - 2
- vegetable oil - 1/2 cup
- plain Greek yogurt - 1/2 cup
- coarsely grated zucchini - 1 cup
Instructions:
Spread walnut halves in a pan. Toast walnuts in a preheated 325 degree oven for about 8 minutes, until they are fragrant. Coarsely chop walnuts, place walnuts in the freezer for 5 minutes to cool. In a bowl, whisk together flour baking powder, baking soda and salt. In a second bowl, mix together the sugar, eggs, oil and yogurt. Add wet ingredients, zucchini and walnuts to the dry ingredients; stir until the batter is evenly moistened. Evenly pour the batter into a buttered and floured 9 x 4 1/2 inch baking pan. Bake in a preheated 325 degree oven for 1 hour and 10 minutes, until the loaf is risen and a toothpick inserted in the center comes out clean. Let loaf cool in the pan on a wire rack for 30 minutes then remove loaf from the pan.
