Zucchini Pecan Bread
Ingredients:
- eggs - 3
- grated zucchini - 2 cups
- sugar - 2 cups
- vegetable oil - 1 cup
- vanilla extract - 1 T
- baking soda - 1 t
- baking powder - 1/4 t
- salt - 1 t
- cinnamon - 1 T
- flour - 3 cups
- chopped pecans - 1 cup
Instructions:
Mix together all ingredients. Stir in pecans. Pour batter into 2 greased loaf bread pans.
Bake in a preheated 350 degree oven for 1 hour, until toothpick comes out clean.
