Farmer’s Breakfast Casserole
Ingredients:
- frozen shredded hash brown potatoes , thawed - 6 cups
- shredded Monterey Jack cheese or shredded Cheddar cheese - 1 1/2 cups
- diced cooked ham - 2 cups
- sliced green onions - 1/2 cup
- eggs, beaten - 8
- evaporated milk - 3 cups
- salt - 1/4 t
- pepper - 1/4 t
Instructions:
Place potatoes in a greased 3 quart pan. Top with cheese, ham and green onions. In a bowl, combine eggs, milk, salt and pepper. Mix well and pour mixture over potatoes.
Bake uncovered in a preheated 350 degree oven for 45 - 55 minutes or until center looks set. Let stand for 5 minutes before serving. Can be made ahead of time, cover and store in the refrigerator. If refrigerated increase baking time an additional 10 - 15 minutes.
