Amish Baked Oatmeal
Ingredients:
- old fashioned rolled oats (not instant) - 2 cups
- light brown sugar - 3/4 cup
- walnuts OR pecans, divded - 1 cup
- raisins - 1/2 cup
- baking powder - 1 t
- cinnamon - 2 t
- salt - 1/2 t
- eggs - 2
- milk - 2 cups
- vanilla extact - 1 t
- butter, melted - 4 T
- baking apples, peeled, cut into 1/2 inch chunks - 2 cups
Instructions:
In a bowl, mix together the oats, brown sugar, 1/2 cup nuts, raisins, baking powder, cinnamon and salt. In a second bowl, whisk eggs together; whisk in the milk and vanilla. Stir together milk mixture butter and oat mixture.
Evenly spread the apples on the bottom of the buttered 8 or 9 inch square baking dish. Evenly pour oatmeal mixture over top and spread evenly. Sprinkle 1/2 cup nuts over the top.
Bake in a preheated 325 degree oven for 40 - 45 minutes, until top is golden and oats are set. Serve warm or at room temperature.
