Apple Pie Bread
Ingredients:
- brown sugar, not packed - 1/3 cup
- ground cinnamon - 1 tsp
- sugar - 2/3 cup
- butter, softened - 1/2 cup
- eggs - 2
- vanilla extract - 1 1/2 tsp
- flour - 1 1/2 cups
- baking powder - 1 3/4 tsp
- milk - 1/2 cup
- apple, peeled, chopped - 1
Instructions:
In a bowl, mix together brown sugar and cinnamon; set aside. In a second bowl, beat together sugar and butter until smooth and creamy. Beat in eggs, 1 at a time, until incorporated; add vanilla, stir until incorporated.
In another, combine flour and baking powder; stir into creamed butter mixture. Mix milk into batter until smooth. Pour half of the batter into a greased and floured 9 x 5 inch loaf pan. Add half the apples and half the brown sugar cinnamon mixture. Lightly pat apple mixture into batter.
Pour remaining batter over apple layer; top with remaining apples and brown sugar mixture. Lightly pat apples into batter; with a knife swirl brown sugar mixture through apples.
Bake in a preheated 350 degree oven for 30 - 40 minutes, until a toothpick inserted in the center of the loaf comes out clean. If top gets too brown, cover top loosely with foil and continue baking until the inside is done.
