Apple Pie Pancakes
Ingredients:
- flour - 1 cup
- packed light brown sugar - 2 T
- baking powder - 1 t
- ground cinnamon - 2 t
- ground nutmeg - 1/2 t
- ground cloves - 1/2 t
- salt - 1/8 t
- whole milk - 1 cup
- egg - 1
- butter, melted, slightly cooled - 1 T
- vanilla extract - 1 t
- apple, grated - 1
- maple syrup, warm - 1/2 cup
- vanilla extract - 1 t
- vanilla bean - scrapings from 1
Instructions:
In a bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, cloves and salt; set aside.
In a second bowl, beat together milk, egg, butter and vanilla. Add wet ingredients to dry ingredients; mix until just combined. Batter will have some small to medium lumps; DO NOT overmix or stir smooth. Gently fold grated apple into batter.
Brush skillet with butter and heat over medium heat. Pour 1/4 c batter on skillet, cook for 1 - 2 minutes until small bubbles appear. Flip pancake, reduce heat to medium low and cook until golden brown. Place pancakes on a baking sheet, keep pancakes warm in a preheated 200 degree oven. Serve with warm maple syrup.
Prepare maple syrup -- stir together maple syrup, vanilla and vanilla bean scraping and serve over warm pancakes.
