Apple Pie Pancakes
Ingredients:
- flour - 1 1/2 cups
- sugar - 1/4 cup
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- apple pie spice - 1 tsp
- Kosher salt - 1/2 tsp
- Kosher salt - 1/8 tsp
- eggs - 2
- buttermilk - 1 1/2 cups
- apple, peeled, diced - 1
- maple syrup - 1/2 cup
- heavy cream - 1/2 cup
- chopped toasted walnuts - 1/2 cup
Instructions:
In a bowl, whisk together flour, sugar, baking powder, baking soda, apple pie spice and 1/2 tsp salt. In a second bowl, whisk together eggs and buttermilk. Whisk buttermilk mixture into flour mixture (a few small lumps are fine). Stir in apple.
Heat a large nonstick skillet over medium-low heat. Pour about 1/4 cup of batter into the skillet. Cook the pancakes until bubbles begin to appear around the edges and in the center, for 1 to 2 minutes. Flip pancakes, cook for another 1 minute, (make sure the underside is golden brown). Place on a baking sheet, cover loosely with foil to keep warm. If needed coat skillet with 1 tsp canola oil.
Prepare maple syrup -- in a saucepan cook maple syrup and 1/8 tsp salt, over medium heat until slightly thickened, about 5 minutes. Stir in cream until fully incorporated; simmer for 1 minute. Stir in walnuts; serve.
