Baked Banana Oatmeal Cups
Ingredients:
- almond butter - 1/2 cup
- mashed bananas - 1 1/2 cups (4-5 bananas) plus 1 banana sliced
- old fashioned oats - 3 cups
- plain unsweetened almond milk - 1 1/2 cup
- maple syrup - 1/4 cup
- vanilla extract - 1 t
- kosher salt - 1/2 t
- raw sliced almonds - 1 cup plus extra for topping
Instructions:
Thoroughly grease bottom and sides of muffin tin. If almond butter is not runny, microwave for about 30 seconds to loosen it up. In a bowl thoroughly combine all ingredients. Spoon into 12 muffin cups. Top with sliced almonds and a slice of banana. Place on center rack in a preheated 375 degree oven for 20 -25 minutes, until oatmeal cups are firm to the touch. If desired turn oven to low broil and broil for 1 - 2 minutes to toast almonds and caramelize the banana on top. Watch closely, almonds burn easy. Cool for a few minutes, then run a knife around the edge to remove muffins. Serve hot or let cool, store covered in the refrigerator.
