Banana Walnut Pancakes
Ingredients:
- flour - 2 cups
- sugar - 1/4 cup
- baking powder - 1 tsp
- baking soda - 1/2 tsp
- salt - 1/4 tsp
- eggs - 2
- buttermilk - 2 cups
- chopped walnuts, toasted, cooled, divided - 1 1/2 cups
- bananas, sliced thin - 2
- butter, melted, slightly cooled - 1/2 cup
- oil - for frying
- banana, sliced thin - 1 for garnish
- powdered sugar - garnish
- whipped cream - garnish
Instructions:
In a bowl, whisk together flour, sugar, baking powder, baking soda and salt; set aside.
In a bowl, whisk eggs together, whisk in buttermilk and butter. Stir flour mixture into buttermilk mixture until just combined (a few lumps are ok). Fold in 1 cup walnut pieces and 2 bananas, into pancake batter. Heat oven to 200 degrees, place a baking dish inside. (To keep pancakes warm.)
Heat 1/4 tsp oil in a nonstick griddle, over medium heat. Place 1/2 cup batter into griddle. Cook pancakes for 2 minutes, until bubbles rise to the top and pop. Gently flip pancakes, cook another 2 minutes. Place cooked pancakes on plate in the oven, cover with foil. Repeat with more oil and remaining batter. Garnish pancakes with banana slices, walnut pieces and whipped cream to desired taste.
