Blueberry French Toast
Ingredients:
- day old bread, cut into 1 inch cubes - 12 slices
- cream cheese, cut into 1 inch cubes - 2 - 8 ounce packages
- fresh blueberries - 1 cup
- eggs, beaten - 12
- milk - 2 cups
- vanilla extract - 1 tsp
- maple syrup - 1/3 cup
- sugar - 1 cup
- cornstarch - 2 T
- water - 1 cup
- fresh blueberries - 1 cup
- butter - 1 T
Instructions:
Lightly grease a 13 x 9 inch baking dish. Place half the bread cubes in the dish, top with cream cheese. Sprinkle 1 cup blueberries over the cream cheese, top with remaining bread cubes.
In a bowl, mix together, eggs, milk, vanilla and syrup. Pour over the bread cubes. Cover, place in the refrigerator overnight. Remove bread mixture from the refrigerator 30 minutes before baking. Cover, bake in a preheated 350 degree oven for 30 minutes. Uncover, continue baking 25 - 30 minutes, until center is firm and surface is lightly browned.
In a saucepan, mix together sugar, cornstarch and water. Bring to a boil; stir constantly, cook for 3 - 4 minutes. Mix in 1 cup blueberries. Reduce heat, simmer 10 minutes, until the blueberries burst. Stir in the butter, pour berry mixture over the baked French toast. Serve hot.
